I have an offer from a regional SLAC across the country. My spouse has never stepped foot in the SLAC's state. How typical/unusual is it for a college at that level to fly you out between offer and acceptance to be sure it's a good fit for your family? Or should we just pay for a visit ourselves?

You can ask. My college paid for a visit like this after I had already decided to come (it was a visit to look at housing). They might be more inclined to pay if you're actually going to come. But it's definitely worth asking.
My R1 school paid for a visit like this for both me and my spouse, but an R1 often has a bigger budget for this sort of thing than a SLAC. I think you can certainly ask.
I would ask. They might be able to cover at least some of the expenses if not all. Also, they might be able to put you up at a faculty house or a college facility. You never know.
Just to add to the pile, you should definitely ask. I had three different schools offer to do this for me (but I made my decision after two fly-outs). Two were R1, and one was R2. Good luck!
