Does anyone have any intel on whether interview requests etc. are going to go on pause over Thanksgiving (next week!), finals, winter break, etc? Is there going to be a flurry of activity in early December to get things in the books before the holidays? It seems like there are still many places with no updates yet…

I'd guess very few places are going to be setting up interviews before the winter break at this point. Most places shut down interviews for the break, which usually includes the final exam time period during fall semester as well. Places who have already conducted their interviews will likely be trying to make offers before or over the break and places now will be setting up schedules for interviews in January.
On the contrary, I think it's about to get rather busy at some institutions.
I'm pretty sure I was offered campus interviews around this time that occurred prior to the conclusion of the semester, but time is winding down to get them in.
Search committees do see the end of the semester as a deadline to get to the next stage of their process, be that conducting phone interviews, inviting people for campus, finishing campus interviews, making an offer, or enforcing a deadline for the negotiation of an offer so they can make the next offer if necessary.
So I agree with Anne-on, which is to say that a lot of searches will be doing something very soon.
As for "shutting down" over break, no interviews will be conducted over break unless it's one-on-one phone interviews, and probably not even those. Probably no big decisions will be made, either, because typically committees need to meet in person, and that needs to happen during the semester. However, the offer/negotiation process will be very active during this time. The chair will be motivated to make it work and not lose time/candidates, so if you're in that process you can expect conversations to occur over the break, except maybe on Christmas Day or something. Likewise, if a negotiation falls through during this time and you're the second choice, you can expect to get a phone call over break. They're not going to wait around and risk losing you.
Do places with late November / early December deadlines typically wait until after the break to review apps? Or do you think same goes for them—starting to do something very soon?
mid-November deadline places will definitely be reviewing apps before the break. However, do not necessarily expect interviews to be scheduled until after.
Definitely expect offers to happen over break. But I think contact for late nov/early dec deadlines may not happen. As faculty we are swamped and coordinating around finals week, etc. is tough. Folks also start holiday travel as well.
For our VAP position at a midwestern SLAC, our deadline is Dec. 1, and the committee will meet to ID phone interview list (top 10) probably first thing back from break (January). Interviews are already on the calendar (we have to schedule in advance with the administration) for late February. So the committee will look to make in-person invites by mid to late January. When I got the job, I had the call for my phone interview while I was at home at my parent's for Christmas (very close to Dec. 25). No students means it's a good time to get the administrative work done.
We are doing phone interviews next week and will be doing campus visits once the semester starts back up in January
We have a Dec1 deadline and we will be making interview invites before we go on break (c. Dec 15 or so) for the interviews to occur in early Jan when we get back.
