Several of the jobs I applied to (cognitive / neuroscience) have no updates, and I feel like the proportion of these 'no news yet' positions is higher than previous years at this time.
Shall I assume there will still be some substantial action in the first several weeks of January?

Think more in terms of the academic calendar of the schools you applied to. Committees aren't likely to meet until their spring semester or winter quarter starts, and campus interviews need to take place when classes are in session.

When the application deadline is Dec 1 or later, I think it not uncommon for the entire interview process to wait until after second semester begins. This could also be when a search that was initially intended to be over by Dec will dip back into the short list.

For the mid-late December deadlines…when would be the latest you could expect to hear about interviews?

I wouldn't worry about mid-late December places yet. Probably the committee was told to read the applications over break, and then there is a meeting scheduled for them to vote on who's getting to the next step. This could even involve a second stage, wherein a search committee comes up with a long list over break, and then the department (or area, if it's a very big dept) will read all of those applications (e.g. 20 people) to decide on the who is invited for interviews. A lot of schools are starting to come back from break after MLK day. So I could see not hearing anything until Feb 1 for those positions.

I was surprised to get contacted for a phone interview from a school that (according to the wiki) already went through on-campus interviews. I had given up hope hearing from any other schools but that was a nice boost in morale! I think as people start accepting positions and freeing up other offers there will be more action in the upcoming month or so.
