I think I have a pretty good idea of what to expect in terms of one-on-one meetings with faculty in the department, students, and even the department head, but what does one talk about when meeting with a dean?

You'll spend some time (talking about as you will in every meeting) talking about your research. Since the Dean is not likely to be a psychologist you may spend some more time explaining the relevance of your research. It would be a good idea to ask about college or university level resources - for example grant reviewers, statistical consulting, faculty mentoring, etc. Dean's offices generally make some contributions in start-up, so you can talk about typical start-up packages and the kinds of things you would need.
