I am applying to a number of visiting lecturer positions in large research universities. In the ad they did not request a research statement but just teaching materials. Would it be wise to mention my research interests in my cover letter, and to send my research statement and publications? or if they did not request it they are not interested in knowing? Would it be beneficial or could it potentially hurt my application?

I don't think it will hurt you to send it, but be prepared that if they didn't ask for it, then they don't care. It sounds like they want you to teach only.
