What kind of service activities might I be asked to do in my first three years as new assistant prof? What types of activities might count as service? The university I'm going to interview at seems to place strong emphasis on it and I want to be prepared for questions but haven't seen much discussion of this issue on this website (or perhaps I overlooked it?). Any advice/ideas would be greatly appreciated.

I'd ask the chair or someone in the dept… Service tasks (and what counts as service) vary from dept to dept. Most people will advise you to avoid it, and that's probably best unless you are certain that the service will be highly valued when it comes time for tenure and whatnot. There was a recent two-part article (not sure if there will be more parts) on the chronicle of higher education site called good deeds that never go unpunished. Part 1 was about teaching and Part 2 was about service. Service is one of those weird balancing acts: you have to do enough to satisfy the people who expect you to do service and seem like you're willing to do it (a team player), but not so much that (a) it hurts your teaching or research or (b) makes the people in your dept who most value research and other measures think that you are not serious about doing research or whatever.
