Could someone say a little about how long it generally takes for people to start receiving phone interviews and fly outs after the close of an ad?

I'd recommend going to last year's Wiki and looking there for an example of the range. People make notes about when the deadline was, when they first heard about phone interviews and campus interviews, etc. Some places do phone interviews just a few days after the deadline (presumably because they had been reading applications all along) and others take much longer.
For me, I got offers for phone interviews about two weeks after the ad closed in the fall semester. But as it got to be closer to the end of the term, they sometimes took longer. And some places didn't offer interviews until after the break if the deadline was 12/1 or so.
For the 10/15 deadlines, I got invited for phone interviews about a week later.
For one January deadline, I was called the day after the ad closed.
After the phone interviews, I think they took another week or two to invite people for campus interviews.
It will vary widely, depending on when the committee gets done reviewing materials. I'd say you could usually expect the phone interview to occur (or at least be scheduled) within a month of the deadline or so though. But you never know. I am in an assistant prof job, and I was called to schedule phone interviews about 6 weeks after the deadline, with the campus interview happening about a month later. Some places move slowly.

I got almost all phone calls to schedule interviews. Emails were more popular for rejections.

Yes, and I meant that in my case, all of my phone interviews were scheduled over the phone. I never got an email from any search committee unless it was a rejection.
As Batman noted, it will vary a lot. I actually received mostly emails, rather than calls, to set up interviews. However, most of the jobs I interviewed at last year were outside of the US. Here are the basic details from my search last year:
Job 1 (international location) — deadline was early September. I received an email early October asking me to come interview that month (no phone interview).
Job 2 (US location) — deadline was late October. I received a phone call in late December asking me to come interview in Feb (no phone interview).
Job 3 (international location) — deadline was early November. I received an email in early December asking for a Skype interview. A week later I was invited to come out for an person interview in Feb.
Job 4 (international location) — deadline was early January. I received an email in early March asking me to come interview that month (no phone interview).
